History of the breed. The Agerolese breed is a dairy breed that originates from the area of Agerola, located in Campania in southern Italy. In the mid-19th century, cattle of Holstein-Friesian and Jersey breeds were brought to Italy from England. As a result of crossbreeding the local population with the cattle brought from England, the Agerolese breed was developed. Since 1992, Agerolese cattle have been threatened with extinction. Over time, this breed has significantly decreased in number due to continuous crossbreeding with Holstein-Friesian cattle. Agerolese cows produce very tasty milk as well as delicious meat. The milk is used for the production of cheese, butter, and other dairy products. Agerolese individuals are medium-sized, with bulls being larger than cows, and they have a calm temperament. Exterior. The Agerolese breed has dark fur, with cows usually being brown and bulls black in color, a light head with a concave profile, large eyes, medium-sized ears, and bulls have medium-sized horns that curve upwards, while cows have straight horns. The body structure is average, with a light stripe on the back; the height at the withers for bulls is 130-135 cm, for cows 120-123 cm, the weight of bulls is 600-650 kg, and the weight of cows is 380-450 kg. The limbs are proportionately developed, with strong, muscular legs and black hooves. The udder is well developed. Conditions of keeping. The Agerolese breed is accustomed to its native climate. Crossbreeding with individuals of other breeds, as well as the lack of pastures and sufficient space for grazing, has led to a reduction in the number of this breed. Agerolese cattle need to be kept in stalls. Fresh air, clean drinking water, and feed are necessary for good milk yields. Direction. The dairy direction of Agerolese cows averages about 2.5 tons of milk. In some cases, cows can produce up to 20 kilograms of milk per day, with the fat content of such milk exceeding 3.5%.

Diet. The diet of the Ageroles breed consists exclusively of grasses and alfalfa. This is related to the risk of spore formation, which can affect the texture of the cheese. Additionally, it is necessary to carefully select grains so that they match the properties of starch and are accessible for absorption by bacteria in the rumen.
